Specifiction of a method for the determination of ITC and VTO produced by enzymatic hydrolysis of glucosinolates. The method does not allow the determination of free ITC and free VTO. The principle consists in drying of the residue, after removal of the fats and oil, if necessary, enzymatic hydrolysis, extraction of the ITC with dichloromethane and of VTO with diethylether, followed by determing of the ITC by gas chromatography and of the VTO by ultraviolet spectrophotometry. An annex gives a method of determing ITC by argentimetry.
