Butter; Determination of the acid value of the fat (Reference method)

Specifies a method, the principle of which consists in separating the fat by melting the butter, dissolving the fat in a mixture of ethanol and diethyl ether and titrating the free fatty acid with an alcoholic standard volumetric potassium hydroxide solution using phenolphthalein as an indicator.
